Warm and filling. Two keywords for food in cold weather! I love soup in fall and winter, especially cream of broccoli soup or cheesy broccoli soup! I made my own version, a little bit lighter, but just as good!
Recipe for 20 Minute Broccoli Parmesan Soup:
Ingredients:
1 bunch of chopped broccoli
1/4 C chopped white onions
3 C skim milk
1.5 C water
1 C grated parmesan cheese
1.5 Tbsp butter
2 tsp salt
1-2 tsp pepper
2 tsp powered garlic
Instructions:
Boil water and milk in large pot, add chopped broccoli and white onions. Bring back to boil, add butter, salt, pepper, and garlic. Turn down heat let simmer for 10 minutes, add parmesan cheese. Stir. Turn off heat, allow for soup to slightly cool. Serve in bowl or crock, top with grated parmesan cheese! Add some crusty French bread on the side for a real treat. Enjoy!
